Lyophilization- the technical term for freeze drying. Our machines first super chill your meal (or snack) to about -45 C, then is placed under vacuum. The trays are then carefully warmed in this super chilled chamber until all the moisture is removed down to its cellular structure. Freeze drying is worlds best method of preserving food because it maintains flavor, color, and most importantly nutrition. No other form of food preservation can do this.
